WThis is a home-style version of a beverage from the seasonal drinks list. It's a party-sized prepared mix that's loaded with the tastes of a festive period, which makes it ideal for a festive gathering. Save the extra syrup you can use for morning drinks, desserts, or to mix another batch of this cocktail.

Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (produces 850ml, to serve 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Place all the items in a pan, bring to a gentle boil, stirring so the sugar melts. Next, turn off the heat and let it to cool fully. Transfer into a sealable bottle, close it keeping it chilled, it will last for around one month.
For the Premix: Mix every spirits and syrup into a big jug, let it rest for one hour, then strain preferably using muslin, making it fully clarified.
For serving: Measure 85ml of your batch mix into a cocktail shaker packed with ice, gently stirring carefully for a minute to chill. Pour into a frosted cocktail glass or equivalent, garnish with a few cranberries and complete it using a light spray with the mandarin essence over the drink.
